Our Texas Wagyu Tri Tip is a uniquely shaped, triangular cut roast from the bottom sirloin. Known for its rich beefy flavor and moderate marbling, the Tri Tip is a favorite for grilling or roasting. It’s a versatile, crowd-pleasing cut that can be cooked to perfection on the grill, smoked, or roasted, offering a tender and juicy experience with every slice. 

This cut is particularly popular in the West Coast BBQ scene, where it’s often enjoyed with a simple rub and grilled to medium-rare.

Hand-cut to order in our Keller shop. Our beef and pork start on Outpost 76, our East Texas ranch, then our butchers break it down by hand. Want a specific thickness or trim? Just ask at the counter.

How to cook your Wagyu Tri-Tip

  • Best method

    Reverse sear

  • Heat

    225 to 250°F smoker or oven, then a 450 to 500°F sear

  • Time

    Indirect to about 115°F, then 2 to 3 minutes per side

  • Internal temp

    Pull at 128 to 130°F (medium-rare)
