This order includes several cuts, and each has its own best method. Open any single product page for that cut's exact method, heat, and temperature. Quick steak doneness guide (pull about 5°F early, it keeps cooking as it rests):
Rare
120 to 125°F
Medium-rare
130 to 135°F (best for Wagyu)
Medium
140 to 145°F
Ground / sausage
160°F (USDA-safe)
AlwaysBring the meat close to room temperature first, use a meat thermometer, and rest before slicing.
