Our beef comes from Outpost 76 Cattle Co., where we raise Black Angus and F1 Texas Wagyu with a focus on quality and consistency. Our cattle are grain-fed with a ration sourced over 70% from our own farm, ensuring premium marbling and rich flavor. Raised with expert care and processed locally in Fort Worth, TX, every cut reflects our commitment to superior beef.
Live Weight vs. Hanging Weight vs. Packaged Weight
When purchasing a whole or half beef, it’s important to understand how weight is measured. Our cattle typically weigh between 1,400-1,600+ lbs live weight before processing. After slaughter, the hanging weight (which is the carcass before trimming and deboning) is usually around 830 lbs for a whole beef, though it can range from 800-900+ lbs. The final packaged weight—the actual meat you take home—averages 450-500 lbs, depending on your chosen cuts and whether you keep items like bones and offal. Selecting more boneless cuts, ground beef, or trimmed steaks will reduce the final take-home weight, while keeping more bone-in options will maintain a higher yield.
Cut & Packaging Specifications
By default, our standard processing includes:
- Steaks: Cut to the butcher’s recommended thickness and packaged 2 per pack
- Roasts: 3-4 lbs each
- Stew Meat: 1 lb per pack
- Bones: 5 lb bags
However, we are a fully custom operation—if you need larger roasts, specific steak thicknesses, or custom packaging, just let us know! If you're unsure about certain cuts, look for an asterisk ( * ) next to the butcher’s recommendation. When in doubt, bone it out—you can always select the “grind” option to turn any cut into ground beef. We also offer:
- Tenderized/cubed options for select cuts
- Burger patties in ½ lb, ⅓ lb, and ¼ lb smash sizes
- Chili grind for a coarse-ground option
Pricing & Value
Pricing is based on hanging weight, not final packaged weight:
- Angus: $6.50/lb hanging weight (~$5,400 for a whole)
- F1 Texas Wagyu: $9/lb hanging weight (~$7,400 for a whole)
At a take-home weight of approximately 450 lbs, this averages out to about $12/lb for Angus and $17/lb for Texas Wagyu across all cuts—including premium steaks like tenderloin and ribeyes—not just ground beef. Some custom processing options may have an additional charge, as noted on the cut sheet.
We accept all major credit cards and most online payment methods through our website. For in-person orders (local delivery or pickup), we also accept cash and checks. A non-refundable deposit of 50% of the total cost is required at the time of purchase, with the remaining balance due upon delivery or pickup.
